In Ecuador, visiting the market is a one of kind experience!

Chef Pancho will meet you at his home and will take you on a tour of ¨La Tola¨ and the Central Market, where you will meet the best specialty vendors, the stand that has the freshest vegetables, a cheese depot, yesteryear meat vendors, the lady who always has the best fruits, and an exotic fruit juice stand. The experience starts off with fresh ingredients and local products, some of which you will not be able to find anywhere else in the world.
Back at the restaurant, Chef Pancho will teach you Ecuadorian cooking techniques and tricks. You will make everything from scratch, chopping, dicing and cooking like a true local. Learn the history and legends of these iconic dishes.

• Traditional Quito Shrimp Ceviche - Served with shrimp cooked to perfection, onions, various tomato textures, and orange juice.
• Fritada with a twist - Pork meat seasoned with salt, pepper, cloves, and chocolate powder. Served with a rustic puree of yellow chick peas, fried corn, and fresh salad.
• Fig Cheesecake - Cheesecake made with figs, soft cheese, heavy cream, and ricotta cheese.
