Overview

You will be invited into the house/restaurant of Andres Pancho Roman, our personal friend, and master chef. He will first take you for a tour in the traditional ¨La Tola¨ neighborhood to hunt for fresh local products that you will use during your cooking class. You will visit a cheese depot, tour the Central Market and learn about the colorful fruits, vegetables, and spices found there. A stop at a banana collective and coconut milk producer is next before heading back to the restaurant. During this tour, you will experience life as a local and will learn how to make 3 traditional dishes with a gourmet twist, which you can replicate back home. Get ready for a packed day filled with incredible sights, tastes, and smells.

In Ecuador, visiting the market is a one of kind experience!
You´ll discover the best smells, tastes and colors of fruits, vegetables, and spices that will help you create the perfect Ecuadorian three-course meal. Chef Pancho will meet you at his home and will take you on a tour of ¨La Tola¨ and the Central Market, where you will meet the best specialty vendors, the stand that has the freshest vegetables, a cheese depot, yesteryear meat vendors, the lady who always has the best fruits, and an exotic fruit juice stand. The experience starts off with fresh ingredients and local products, some of which you will not be able to find anywhere else in the world.
Cooking Class
Back at the restaurant, Chef Pancho will teach you Ecuadorian cooking techniques and tricks. You will make everything from scratch, chopping, dicing and cooking like a true local. Learn the history and legends of these iconic dishes.
Time to Eat
Once finished in the kitchen, Chef Pancho sets a beautiful table and all the hard work pays off. It´s time to enjoy every course created taking in all the smells, tastes, colors, and textures while enjoying the most beautiful view of Historic Quito.

• Traditional Quito Shrimp Ceviche - Served with shrimp cooked to perfection, onions, various tomato textures, and orange juice.
• Fritada with a twist - Pork meat seasoned with salt, pepper, cloves, and chocolate powder. Served with a rustic puree of yellow chick peas, fried corn, and fresh salad.
• Fig Cheesecake - Cheesecake made with figs, soft cheese, heavy cream, and ricotta cheese.
